So this post is a little unusual for the LG blog – but hey, I promise there will be some photos involved!
Jeff and I have been working on eating better, watching calories and making sure to get some exercise in daily! I know, I know, lots of people do this – and don’t even have to try, but we do! Anyhow we’ve been enjoying trying new things and new recipes that are good for us, and actually TASTE good too! b/c I am going to admit right now that I am never going to agree that ff cheese is good – and that you “can’t taste” the difference! We totally have learned to pick and choose our battles with food – and have tried finding a balance between good taste – and good healthy foods.
So anyway – now it’s time to toot my own horn, yes, I just said that! Yesterday I made some super yummy wraps for lunch – and I can be excited b/c I like to think that I totally “made the recipe up!” - that is, I randomly was going through the fridge and collected ingredients that I thought would be good for a light and healthy wrap.
So, lets get to it – and we’ll call them “Lisa’s awesome wraps” – why!? well, mostly for lack of a better name, but also b/c I’m awesome ;)
A yummy wrap with grilled chicken, tomatoes, onion and fresh spinach. The best part? If you’re anything like us, these are ingredients that we pretty much always have in the house, which means we can whip this up anytime – and pretty quickly!
Lisa’s Awesome Wraps:
calories: 422 per wrap
**we mainly watch our calorie intake, but when you’re making it – I’m sure it wouldn’t be to hard to add up fat or anything else you are watching. Actually I’m pretty sure it’s close to ff, which, is one of the reasons that it’s awesome!
2 – whole wheat medium tortillas
8oz – grilled chicken breast (marinated, see below recipe for how I marinated it)
2oz – Pepperjack Cheese
1 – roma tomato
1/2 cup – diced red onion
2 cups – fresh spinach
2 tbs – Gross family dressing (scroll down for this recipe as well)
Marinate your chicken, actually the longer it marinates the better. Â I cooked the chicken on the stove with a little pam. Usually I would grill the chicken, but it’s raining and I didn’t feel like going outside! I cooked the chicken on medium heat. Â Use extra marinate in the pan while cooking.
Put your 2 cups of spinach in a bowl and add about 2tbs of dressing to it – just so it’s lightly coated. You could get away with doing more spinach – no need to add more dressing, a little goes a long way.
Looks good right, now let your chicken cool down – just a bit and add it in there (4oz for each). Roll it up, and bam! You’re done.
p.s – for you vegetarians, this would probably be good without the chicken too!
Marinate (based on 8oz of chicken):
8oz – Boneless skinless chicken breast
2tbs – Teriyaki Â (or just enough to cover the chicken)
1 splash – Worcestershire Sauce
1/2 tsp – Mrs. Dash Garlic & Herb seasoning
1/2 tsp – Garlic & Sea salt
*The longer you let your chicken marinate, the better. Â I sometimes just put it in a ziplock bag and throw it in the fridge for when I need it.
Gross family dressing – yeah, our last name is Gross (haha, you can laugh if you want). But I also just want to say that I did NOT create this dressing. I got the recipe from my mom – who found it online (idk where). This dressing is AMAZING on salad – and only 50 calories for 1tbs. This recipe will make more than what you’ll need for the wraps – but we use it on salad all the time, so it doesn’t ever go wasted in our house!
1/4 cup – water
1/4 cup – olive oil
1/2 cup – vinager
3/4 cup – sugar
1tsp – mustard
2tbs – green onion
Give it a good shake and that’s it! It usually keeps good in the fridge for about a week. Just be sure to shake up before each use!
